The call

The oven would not stay lit. The pilot would light and burn while the button was held down, then go out the moment it was released — every time, on a range that had worked for years.

What we found

That symptom is close to a diagnosis on its own. A standing-pilot range keeps its gas valve open with a thermocouple: a probe that sits in the pilot flame and makes a few thousandths of a volt out of the heat itself. That tiny current is all that holds an electromagnet inside the safety valve open. Hold the button and you are holding the valve open by hand; let go, and the thermocouple has to take over.

Here it could not. The probe had aged to where its output no longer reached the level the magnet needs, so the valve did the one thing it exists to do and shut the gas off. Nothing was leaking and nothing was dangerous — the range was refusing to pass gas to a burner it could no longer prove was lit.

One other thing the photographs show: the safety valve and the pipework around it were furred over with cooking debris. That is not what caused this failure, but a pilot needs clean air to burn properly, and it is worth knowing about on a range of this age.

The fix

Replaced the thermocouple with the correct part for the range and set the pilot properly.

Then we stayed and watched it, because this is a fault that can be verified honestly on the spot: pilot lit, button released, flame held on its own; oven burner lit and cycled; pilot still standing afterwards. We ran it through that several times rather than once — a marginal thermocouple can pass a single test and fail cold an hour later.

A note on the machine itself. Garland builds these for restaurants, and a lot of them end up in home kitchens, where they outlive everything around them. They use standing pilots rather than electronic ignition, which is why a repair like this is a small part and an afternoon rather than a control board.
